Pudina Rice, also known as Mint Rice, is a flavorful and aromatic dish that combines the freshness of mint with spices and rice. Here's a step-by-step guide to preparing this delightful meal, including nutritional information and illustrative images.
Ingredients:
- 1 cup Basmati rice
- 1 cup fresh mint leaves (pudina)
- 2 green chilies
- ginger
- coriander leaves
- garlic pods
- 1 medium-sized onion, finely chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder (daniya powder)
- 10-12 cashew nuts (kaju)
- 2 tablespoons cooking oil
- Salt to taste
- 2 cups water
- Whole spices: 1-inch cinnamon stick, 2 cloves, 2 green cardamom pods
Step-by-Step Cooking Instructions:
Cook the Rice:
- Rinse 1 cup of Basmati rice under running water until the water runs clear.
- In a pot, add the rinsed rice and 2 cups of water.
- Bring to a boil, then reduce the heat to low, cover, and let it simmer until the rice is tender and water is absorbed (approximately 15 minutes).
- Once done, fluff the rice with a fork and set aside to cool.
2. Mint Paste Preparation:
- In a blender, add the fresh mint leaves, coriander leaves, garlic pods, ginger and green chilies. Blend to a smooth paste without adding water.
3. Sauté the Spices ,Onions and add mint paste:
Heat 2 tablespoons of cooking oil in a pan over medium heat. Add 2 tablespoons of cashew nuts and sauté until they turn golden brown. Remove and set aside. In the same pan, add the thinly sliced onion and sauté until translucent.
To the sautéed onions, add 1 teaspoon of turmeric powder and 1 teaspoon of coriander powder. Stir well. Add the prepared mint paste to the pan. Cook the mixture for 3-4 minutes until the raw aroma of mint dissipates.
4. Combine Rice with Mint Mixture:
- Add the cooked and cooled rice to the pan with the mint mixture.
- Gently mix to ensure the rice is evenly coated with the mint and spice blend.
- Adjust salt to taste.
5. Garnish and Serve:
