Pudina Rice

Pudina Rice, also known as Mint Rice, is a flavorful and aromatic dish that combines the freshness of mint with spices and rice. Here's a step-by-step guide to preparing this delightful meal, including nutritional information and illustrative images.



Ingredients:

  • 1 cup Basmati rice
  • 1 cup fresh mint leaves (pudina)
  • 2 green chilies
  • ginger
  • coriander leaves
  • garlic pods
  • 1 medium-sized onion, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder (daniya powder)
  • 10-12 cashew nuts (kaju)
  • 2 tablespoons cooking oil
  • Salt to taste
  • 2 cups water
  • Whole spices: 1-inch cinnamon stick, 2 cloves, 2 green cardamom pods

Step-by-Step Cooking Instructions:

  1. Cook the Rice:

  • Rinse 1 cup of Basmati rice under running water until the water runs clear.
  • In a pot, add the rinsed rice and 2 cups of water.
  • Bring to a boil, then reduce the heat to low, cover, and let it simmer until the rice is tender and water is absorbed (approximately 15 minutes).
  • Once done, fluff the rice with a fork and set aside to cool.

    2. Mint Paste Preparation:

  • In a blender, add the fresh mint leaves, coriander leaves, garlic pods, ginger and green chilies. Blend to a smooth paste without adding water.




 3. Sauté the Spices ,Onions and add mint paste:
    
  • Heat 2 tablespoons of cooking oil in a pan over medium heat.
  • Add 2 tablespoons of cashew nuts and sauté until they turn golden brown. Remove and set aside.
  • In the same pan, add the thinly sliced onion and sauté until translucent.
  • To the sautéed onions, add 1 teaspoon of turmeric powder and 1 teaspoon of coriander powder. Stir well.
  • Add the prepared mint paste to the pan.
  • Cook the mixture for 3-4 minutes until the raw aroma of mint dissipates.

    4. Combine Rice with Mint Mixture:

    • Add the cooked and cooled rice to the pan with the mint mixture.
    • Gently mix to ensure the rice is evenly coated with the mint and spice blend.
    • Adjust salt to taste.


    5. Garnish and Serve:
    • Garnish the Pudina Rice with the sautéed cashew nuts.
    • Serve hot with a side of raita or plain yogurt.
