Spicy Vellulli(Garlic) Kaaram rice

 Here’s how you can prepare Spicy Vellulli Kaaram Rice, step by step:




Ingredients:

  • 2 cups cooked rice
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp jeera (cumin seeds)
  • 2 dry red chilies (broken)
  • 10 curry leaves
  • 5 garlic pods (crushed)
  • ½ tsp turmeric powder
  • 1 tsp coriander powder (daniya powder)
  • 1 tbsp sesame seeds powder
  • ½ tsp salt (adjust to taste)
  • 1 tsp dry chili powder
  • 2 tbsp chopped coriander leaves

Step-by-Step Cooking Instructions:

Step 1: Heat the Oil and adding spices

  • Heat 2 tbsp oil in a pan on medium heat.
  • Once hot, add mustard seeds and let them splutter.
  • Add jeera (cumin seeds), dry red chilies, curry leaves, and crushed garlic.
  • Sauté for 30-40 seconds until the garlic turns golden brown.




Step 2: Preparing the Spice Base
  • In a small bowl, make a kacha pacha paste by mixing:
    • Crushed garlic
    • Chili powder
    • Jeera (cumin seeds)
  • Now, add the kacha pacha paste to oil pan and sauté until the raw smell disappears.
  • Then, add turmeric powder and mix well.




Step 3: Mixing with Rice

  • Now add the cooked rice to the pan then add remaining masalas like daniya powder and sesame powder then give it a good mix.
  • Cook for 2-3 minutes on low heat.




Step 4: Garnishing and Serving
  • Turn off the heat and sprinkle fresh coriander leaves.
  • Serve hot with raita or plain yogurt.
