Ingredients:
- 2 cups cooked rice
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp jeera (cumin seeds)
- 2 dry red chilies (broken)
- 10 curry leaves
- 5 garlic pods (crushed)
- ½ tsp turmeric powder
- 1 tsp coriander powder (daniya powder)
- 1 tbsp sesame seeds powder
- ½ tsp salt (adjust to taste)
- 1 tsp dry chili powder
- 2 tbsp chopped coriander leaves
Step-by-Step Cooking Instructions:
Step 1: Heat the Oil and adding spices
- Heat 2 tbsp oil in a pan on medium heat.
- Once hot, add mustard seeds and let them splutter.
- Add jeera (cumin seeds), dry red chilies, curry leaves, and crushed garlic.
- Sauté for 30-40 seconds until the garlic turns golden brown.
Step 2: Preparing the Spice Base
- In a small bowl, make a kacha pacha paste by mixing:
- Crushed garlic
- Chili powder
- Jeera (cumin seeds)
- Now, add the kacha pacha paste to oil pan and sauté until the raw smell disappears.
- Then, add turmeric powder and mix well.
Step 3: Mixing with Rice
- Now add the cooked rice to the pan then add remaining masalas like daniya powder and sesame powder then give it a good mix.
- Cook for 2-3 minutes on low heat.
- Turn off the heat and sprinkle fresh coriander leaves.
- Serve hot with raita or plain yogurt.
