Step-by-Step Cooking Process for Lemon Rice
Ingredients:
- 2 cups cooked rice
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp jeera (cumin seeds)
- 1 tbsp minapappu (urad dal)
- 1 tbsp senagapappu (chana dal)
- 1 tbsp pallilu (peanuts)
- 10 curry leaves
- 1 lemon (juiced)
- 1/2 tsp miriyalu (black pepper, crushed)
- 2 dry red chilies (broken into pieces)
- 2 green chilies (slit lengthwise)
- 1/2 tsp turmeric powder
- Salt to taste
- A pinch of inguva (hing or asafoetida)
Step-by-Step Cooking Process
- Prepare Ingredients: Gather all the ingredients and keep the cooked rice ready.
- Heat Oil: In a pan, heat oil on medium flame.
- Temper Spices: Add mustard seeds, jeera (cumin), and let them splutter.
- Add Dals & Peanuts: Add minapappu (urad dal), senagapappu (chana dal), and pallilu (peanuts). Roast them until golden brown.
- Add Chilies & Curry Leaves: Toss in broken dry red chilies, slit green chilies, and curry leaves. Let them fry for a few seconds.
- Seasoning: Add crushed black pepper (miriyalu), turmeric powder, salt, and inguva (asafoetida). Mix well.
- Mix with Rice: Add the cooked rice and mix gently so the spices coat the rice evenly.
- Add Lemon Juice: Turn off the flame and pour fresh lemon juice over the rice. Mix gently.
- Serve & Enjoy: Garnish with fresh coriander leaves if desired and serve warm.
